Something I whipped up for the family earlier tonight. I used meatless Morningstar chicken in this dish and tossed that with sauteed mushrooms, onions, bell peppers, and garlic. I then tossed the pasta with the chicken and vegetables and a creamy pesto Parmesan sauce. As a side dish, I roasted some red potatoes which were tossed with basil, oregano, salt, pepper, lemon pepper, and sprinkled with Parmesan cheese prior to being put in the oven. All in all, a delicious dish – next time, I’ll make some more sauce and make this pasta creamier.
